Ebisu Flower Park, a Japan-based cocktail bar that revolves around the concept of a flower park with seasonal blossoms, has opened memberships for a Hong Kong location. The one-time payment will allow insiders (and up to three of their friends!) to enjoy access to the bar’s secret venue in the city and its international branches — current and planned. 

The Ebisu Flower Park experience

Ebisu Flower Park is an exclusive floral sanctuary where members get to sample a seasonal menu of cocktails that changes based on the bloom of the month, along with a selection of snacks. The location is only revealed once a membership is purchased, which will set you back HK$4,700. But once you’re in, you get unlimited access to all 13 of Ebisu’s premises in Japan — which includes addresses in Tokyo’s buzzing Shibuya district, the historic city of Kyoto, and Osaka’s commercial centre Umeda.

There are no monthly or annual fees, but the Japan bars have a table charge of ¥880 (HK40) per person and it’s advised that you make a reservation. The cocktails will each be priced at about HK$150 and are crafted keeping seasonal flowers in mind. The Japanese outlets will therefore feature pansies in January, tulips in February, and sakura in March (since it’s cherry blossom season in Japan), and so on. However, the Hong Kong menu may differ based on the flowers in season here. There’s no strict dress code, but children are not allowed in the club.

Other Ebisu Flower Park locations

While the main spot in Tokyo highlights from flowers from around the world, the Shibuya specialty store serves up parfaits on top of cocktails. There are also plans to open other international locations, most notably in New York where no more than 300 people can sign up for entry. There are also reports that Ebisu will launch in Singapore, Seoul, London, and Shanghai.

Stocking milk tea (pronounced si mut lai cha) is a popular drink order as it is the authentic classic milk tea preparation in Hong Kong. The staple is prepared by straining multiple types of tea leaves into a cup using a chinois. (Pu’erh and ceylon tea are generally used, although the particular proportions differ between restaurants and are regarded as a secret.) A sackcloth bag covers the chinois to better filter the tea leaves, resembling a pair of pantyhose. Most cha chaan tengs use the brand Black & White Full Cream Evaporated Milk as it is made with fresh Netherlands milk, which is why you commonly see milk tea served in a Black & White cow logo ceramic cup representing the brand. Stocking milk tea has a richer, smooth balanced taste of black tea and milk than average milk tea and is a preferred order as a drink. 

Cha zau (茶走)

Cha zau milk tea originated from stocking milk tea. The way of making cha zau is slightly different from the classic preparation, as it is made of black tea, condensed milk, and sugar. The ratio of black tea and milk varies between these two versions of milk tea. Cha zau originated from customers requesting milk tea with no sugar added, worrying it would increase saliva production (making their request with the phrase zau tong, or “no sugar”). So cha chaan tengs started using condensed milk as a sugar alternative, which then became popularly ordered due to the resulting rich sweetness and creaminess.

Red bean ice or red bean fleecy is known in Cantonese as hung dau bing. This cold red bean beverage consists of crushed ice with sweet red beans and vanilla ice cream. It is a classic refreshing dessert drink ideal for those hot summer days. This drink is best enjoyed using a big spoon to taste the mix of crunchy crushed ice, red beans, and creamy milk texture. Red bean ice is prepared by first cooking red beans with sugar to form a red bean paste which is then chilled in the refrigerator. After that, the red bean paste, evaporated milk, and crushed ice are combined into the sweetest dessert cup to order.

Hot water with egg (pronounced gwun sui dan) is a drink seen in traditional cha chaan tengs. As you may guess, the traditional way of serving this drink is by preparing a cup of hot water and dropping a raw egg in immediately before serving. Stir to incorporate the egg before it cooks, and add in white sugar before drinking. This warm, nurturing drink originated due to a lack of food supply in the time of old Hong Kong and was seen as a nutritional beverage. It tastes similar to light egg drop sweet soup. Hot water with egg might seem like an odd drink nowadays, but it is a simple way to grasp the old style of cha chaan teng. 

Hot Coke with ginger and lemon (熱薑檸樂)

Hot Coke with ginger and lemon (pronounced yit geung ling lok) is a drink that is commonly believed to relieve cold symptoms. Lemon is rich in vitamin C, and most people have heard Coke contains black sugar. In Chinese medicine, black sugar and ginger tea can improve body circulation and strengthen the stomach and spleen. This drink is bubbly, sweet, and slightly sour, and has a strong spiciness from the ginger. The soft drink’s carbonation is reduced significantly by the boiling process, making it easier on a sore throat. It is prescribed to alleviate cough and congestion, though its effects are not scientifically proven. The remedy is prepared by boiling Coca-Cola in a pot, adding in pre-peeled ginger and lemon slices for a few minutes, and pouring in a cup to serve.

Ribena is a blackcurrant drink that originated in the United Kingdom but has been a nostalgic drink in Hong Kong since the 90s. It is a concentrated blackcurrant juice that comes in non-carbonated or carbonated forms. In cha chaan tengs, Ribena is served with lemon to enhance its fruitiness (pronounced ling bun). It pairs well with soda or sparkling water. The result is sweet, fruity, slightly sour, and refreshing, with anthocyanins that are great for eye and skin health making it commonly known as an ideal drink for children.

Yuen yeung (鴛鴦)

This drink is commonly called yuen yeung. The name of the drink comes from the legend of mandarin ducks always coming in a pair (the Chinese name for the drink and the type of duck are the same) or as a reference to the combination of Western and Eastern drinks, coffee and milk tea. It is made with a 1:1 ratio of milk tea to coffee. This drink is typically smooth and has the sweetness from the milk lingering with a light bitter taste of coffee. It is a drink that gives you a great balance of complementary flavours and a boost of caffeine, a great alternative to order if you are indecisive about ordering between milk tea and coffee.

GlowBall, which has a 700 square feet ball pit with more than 750,000 balls, is open from Tuesday to Saturday for the next six months at Hilltop Plaza in Central. The venue is only open to patrons over 18 years old.

The new evenings-only venue has LED lights, thumping music, and a guest DJ on Fridays and Saturdays. The drinks menu includes innovative cocktails like the Guava Boba G&T and Murder in the Ball Pit with LED light ‘ice cubes’, as well as wine and prosecco by the glass and seasonal beers. If you’d rather dive into the ball pit sober, take your pick from non-alcoholic drinks like apple iced teas, cold brew coffee and mango boba.

Tickets for one-hour or 90-minute sessions at GlowBall are available on Eventbrite and are priced between HK$98 and HK$188, depending on the day, time, and length of your visit. There are only 30 guests allowed per session, so the organisers recommend that you make a reservation as walk-in slots are limited. Patrons who spend more than HK$300 at any of the 100 bars taking part in the campaign will get a card with a QR code, which they must scan to enter the draw online and redeem their prizes if they win. Successful participants should take an identity card and their QR code to the gift collection counter at Granville Building in Tsim Sha Tsui, between May 1 and June 7, 2024, from 2pm-6pm.

Lucky draw cards will not be given out at the participating bars after May 31. However, winners who get their cards before then can redeem their prizes online before 11pm on June 4. The speakeasy had to close soon after its launch because of the pandemic, but it reopened in 2021 as the members-only Maison Le Cercle, in collaboration with Pernod Ricard. However, XX is set to return to the city’s nightlife landscape this month when it reopens to walk-in customers.

The bar, located on the fifth floor of the award-winning Rosewood in Tsim Sha Tsui, will be open to all patrons and have no restrictions, such as passwords or memberships. It will retain its intimate setting, complete with velvet couches and antique mirrored tables, and have sweeping views of the city’s skyline.

Bar manager David Monroy and his team have curated the drinks menu, which includes a wide array of wines, whiskies and seasonal cocktails, priced at HK$170 onwards per drink. XX will be open from Tuesdays to Saturdays from 5pm till midnight, and will close at 1am on weekends.

Ko — who is the beverage manager of Cordis, Hong Kong — was crowned the World Bartender of The Year 2023, and won the Cocktail of The Year — Low ABV and Best Sensory Skill awards.

The four-day event, which was organised by the International Bartenders Association in Rome, saw Ko compete against mixologists from 67 countries around the world and become the only contestant to win three top awards this year.

Ko, the chief mixologist of Alibi — Wine Dine Be Social, impressed the judges with his cocktail inspired by Yuen Yueng — the classic Hong Kong drink that combines coffee and milk tea — and to secure the Cocktail of the Year Award in the Low ABV category. He was also recognised for this outstanding ability to engage all the senses and create a truly immersive and unforgettable experience for cocktail enthusiasts, and therefore awarded the Best Sensory Skill Award.

The World Bartender of The Year 2023 is awarded in two categories: Classic and Flair. While Ko took home the Classic award, Roman Zapata from Argentina won in the Flair category. The Cocktail of the Year is also awarded in the Before Dinner, Long Drink, Sparkling, and After Dinner categories, as well as Low ABV.

It’s been a big year for Hong Kong’s bar scene, as two venues from the city made it to the World’s 50 Best Bars list for 2023: Coa and Argo. Coa also made history by topping the Asia’s 50 Best Bars rankings for three years in a row. More recently, 11 bars from the SAR were included in the 2023 edition of the Top 500 Bars list.

The top-ranking bar from the SAR for 2023 is Coa, which took the No. 23 spot and topped the Asia’s 50 Best Bars List for 2023. Sydney bar Maybe Sammy is the No. 1 bar in the world this year, while Singapore’s Jigger & Pony was the highest-ranking establishment in Asia at No. 5.

The other Hong Kong bars that made the list are Penicillin (No. 42), DarkSide (No. 69), The Aubrey (No. 90), Argo (No. 105), The Pontiac (No. 112), Quinary (No. 144), Mostly Harmless (No. 191), Tell Camellia (No. 246), Mizunara: The Library (No. 299) and The Old Man (No. 371). Earlier this year, seven of these venues also made it to the Asia’s 50 Best Bars list, and four of them were included in the 51-100 rankings.

The Top 500 Bars list used AI to compile data from more than 2,000 sources online in more than 20 languages, as well as the opinions of experts, journalists and influencers, and rankings, reviews on platforms, social media, and search engines.

Last year, 20 Hong Kong bars were included in the list. The venues that dropped out of the rankings this year are The Wise King, The Diplomat, Foxglove, Ozone, Daily Tot, Dr. Fern’s Gin Parlour, Room 309, Caprice Bar, and PDT.

This month, evaporated milk brand Black & White is collaborating with 100 cha chaan tengs across the SAR to give away 10,000 free cups of milk tea on weekdays this November.

The participating cha chaan tengs — which include local favourites such as Wah Nam Sing Butt in Sham Shui Po and Kam Wah Café in Prince Edward — will give away steaming hot cuppas from Monday to Friday until November 30 at various times between 9.30am and 3pm on specific days.

Hong Kong milk tea is made by combining Ceylon black tea with either evaporated milk or condensed milk instead of traditional milk, and is usually had with breakfast or lunch at a diner called a cha chaan teng, or open-air stalls known as dai pai dongs. It is also called “silk-stocking milk tea” because the sack cloth bag used to filter the tea gradually becomes an intense brown after repeated use.

The technique of making Hong Kong milk tea — which involves several steps and specific equipment — is recognised as one of the intangible cultural heritages of Hong Kong. The tea can be served hot, with ice cubes, or in a cup nestled among ice cubes (called ice bath milk tea).

Instead of traditional table seating, this coffee shop on the ground floor of E Hall has metal stools and benches inside old jail cells, where customers can sip on their coffee.

Patrons enter through a narrow hall with stark white interiors and can place their orders for coffee and the cake of the day with the staff, who also work out of a repurposed prison cell. The café has retained the cell bars, which are painted black, and each cell is interconnected so that visitors can walk through them.

On The Hill’s signature caffeine offerings include their espresso-and-coconut milk concoction called the AmeriCOCO, and Thai Dirty — a mix of condensed milk, espresso, and milk poured so that the layers are distinct. The café will soon expand its menu to include bread and light snacks.

E Hall is a three-storey building located in front of the old prison yard, next to the modern J Cube and adjacent to D Hall. It was completed in 1915 and its design is similar to that of Victoria Prison’s B Hall. The prison — along with the former Central Police Station and the Former Central Magistracy — is part of Tai Kwun’s 16-building complex that is among Hong Kong’s protected heritage buildings.

Tai Kwun also conducts guided tours of the complex premises in English, Cantonese and Putonghua, as well as a Hidden Spaces tour of locations in the complex that are usually off-limits to visitors.

On The Hill has three other locations across Hong Kong — in North Point, Ngau Tau Kok, and Kwun Tong, the last of which opened in June this year. The coffee shop brand also had a branch in To Kwa Wan, which closed at the end of October.

Wine Industry Shows Potential To Grow Between 2023 and 2027

The global wine industry revenue would amount to US$333 billion this year, with sales growth projected at 5.52% annually between 2023 and 2027, according to Statista. It also predicted mainland wine-sector revenue to reach US$27.2 billion this year and grow 3.93% annually between 2023 and 2027. An HKTDC market research survey conducted in 2020 showed mainland consumers were growing increasingly knowledgeable about wine.

Given its status as a duty‑free port, wine merchants and investors regard Hong Kong as the most cost‑effective and convenient distribution hub to store investment-grade wines for delivery to markets on demand. Mainland China and Macao, which accounted for about 69% of wine exports last year, were the major destinations. In value terms, Hong Kong wine exports increased 45.1% last year.

Showcase For Quality Global Wines

The 15th Wine & Spirits Fair will feature a diverse range of fine beverages, including old-world and new-world wines, wines and liquor from Mainland China and Japan, as well as whiskies and beers. The fair will feature 11 group pavilions showcasing products from Australia, France, Germany and Italy, Japan, Mainland China, as well as the Hong Kong General Chamber of Wine & Spirits.

In addition to beverages, the Wine & Spirits Fair features zones that promote the industry’s all-round development, including Wine Education as well as Wine Accessories, Equipment and Services. Snacks and nibbles to accompany wines will be showcased in the Friends of Wine zone.

Wine & Spirits Fair events include wine-tasting sessions where buyers and visitors can try fine wines from around the world. Various seminars and tasting sessions will explore wine trends in different regions and markets, and introduce wines, sakes, whiskies, beers and more, offering participants a chance to savour unique flavours.

Prize-giving ceremonies for the Cathay Pacific Hong Kong International Wine and Spirit Competition 2023 and WineLuxe’s Top 10 Food & Wine Pairing Restaurant Award will be held on the first and second day respectively. The Hong Kong Bartenders Association will also host the Hong Kong International Mixology Showdown 2023, themed Artistic Elixir, on the first day.

Public Day Welcomes Wine Enthusiasts

The last day of the Wine & Spirits Fair, Sunday November 5, will be the Public Day, which welcomes both industry professionals and members of the public aged 18 or above.

Multiple tasting sessions and masterclasses will be held on the Public Day, including Sip Around the World with CC session hosted by renowned wine critic Cecilia Wong, and a tasting session of Austrian wine by Master of Wine Debra Meiburg. The list, which was announced in Singapore on Tuesday night, featured Coa at No. 20, and Argo at No. 34. The world’s best bar this year is Sips in Barcelona, while the city with the highest representation on the list is London with five entries.

Other Asian cities that featured in this year’s edition of the list included Singapore with three bars, Bangkok and Tokyo with two venues each, and Seoul with one. While Coa took the top spot at the 2023 Asia’s 50 Best Bars ceremony held earlier in 2023 for a record-breaking third consecutive year, Bangkok’s BKK Social Club was the highest-ranking Asian bar on the international list, coming in at No. 13.

Last week, it was revealed that two Hong Kong bars found places in the 51-100 rankings of the World’s Best Bars for 2023 — Penicillin (No. 71) and DarkSide (No. 97) — giving the city a total of four bars in this year’s Top 100 list. This is an improvement in Hong Kong’s overall representation, as the city had three establishments in the list last year.

The rankings are arrived at through a voting process by The World’s 50 Best Bars Academy, which includes 680 beverage experts from 28 regions across the world, comprising bartenders, consultants, writers, and cocktail specialists. Each member casts seven votes based on their bar experiences over the preceding 18 months.

50 Best is touted as the leading authority in the international drinks scene and global gastronomy, with a 20-year history of highlighting worldwide trends and the top restaurants and bars from across the globe. In April, it announced the 50 Best Restaurants for 2023, which featured legendary Hong Kong-based Cantonese restaurant The Chairman in the No. 50 spot. In addition, two Hong Kong hotels made it to the first-ever World’s 50 Best Hotels list: Rosewood (No. 2) and The Upper House (No. 4).
